Thai Salsa

Ingredients:

  • 1 can of roasted tomatoes
  • 1 small jar of pimentos
  • 1/2 a shallot
  • 1 tablespoon of minced garlic
  • 2 tablespoons of ginger (we use the kind in a squeeze bottle)
  • 1-2 tablespoons of soy sauce
  • 1 handful of fresh Thai basil
  • 2 teaspoons of red curry paste
  • A few squirts of sriracha

Directions:

Combine the ingredients above and blend to your desired consistency (I prefer salsa a little chunkier, but you do you).

What we liked:

The roasted tomatoes, as opposed to regular, added some flavor, and the shallot was a good call over using an onion since there are a lot of other flavors going on. We liked the wonton chips with the salsa, but you could eat this with tortilla chips, use it as a salad dressing, or dress up some grilled chicken with it.

What we might do different:

Taylor found the salsa a little sweet so we may try a different red pepper rather than pimentos next time. (I know you are probably wondering why the heck I used pimentos in the first place…I knew there was a sweet, red pepper in there when we tried this in Savannah, and I noticed pimentos being popular ingredients at multiple restaurants over there…so I went with that) The red curry and sriracha ratios also need a little fine-tuning.
